Blue Cheese Hot Wing Dip

Grilled hot wings are a no-brainer for any party. They are quick, easy, and great for feeding a big group. Add this blue cheese dip from myrecipes.com and you’ll have your guests breaking ankles to get another serving.

 

What You Need:

  • 1 (8 oz.) package 1/3-less-fat cream cheese, softened and cut into pieces
  • 1/2 cup loosely packed fresh flat-leaf parsley leaves
  • 1/4 cup chopped green onions
  • 1/4 cup reduced-fat mayonnaise
  • 1/4 cup reduced-fat sour cream
  • 2 tablespoons white wine vinegar
  • 1 garlic clove, minced
  • 1 teaspoon hot sauce
  • 1 teaspoon lemon zest
  • 1/2 teaspoon coarsely ground pepper
  • 1 (4 oz.) package crumbled blue cheese
  • 1 to 2 Tbsp. milk (optional)

 

What to Do:

  1. Pulse first 10 ingredients in a food processor 4 times or until blended.
  2. Transfer mixture to a serving bowl and gently stir in blue cheese.
  3. If desired, stir in 1-2 Tbsp. milk, 1 tsp. at a time, for desired consistency.
  4. Cover and chill for 1-2 hours before serving.

Basketball Mini Burgers

These basketball mini burgers are the ultimate tournament sliders. These basketball-themed grilled beauties from Hungry Happenings are the perfect on-theme way to show your love of the big game.

 

What You Need:

  • 6 slices cheddar American cheese
  • Black food coloring
  • 3 russet potatoes
  • ¼ cup vegetable oil
  • ½ tsp salt
  • 1 slice of white bread crust removed
  • 1 ½ tbsp. milk
  • 1 tbsp. ketchup or steak sauce
  • Black pepper to taste
  • 1 lb. ground chick

 

What to Do:

Potatoes:

  1. Preheat grill to 475F.
  2. Cut potatoes into 2” rounds.
  3. Mix potatoes with vegetable oil, salt, and pepper and bake until brown.

Burgers:

  1. Tear white bread into small pieces, place in mixing bowl with milk, mash into a paste, and add ketchup.
  2. Stir to combine and add ground chuck until mixed.
  3. Scoop portions for 2” sliders.
  4. Grill until cooked and melt cheese slightly on top.

Prep:

  1. Place burger on top of cooked potato round.
  2. Garnish with lettuce and tomato if desired.
  3. Use small paint brush and black food coloring to paint the basketball design.

Atomic Buffalo Jalapeno Poppers

The combination of smoked bacon, jalapenos, and cheese is a sure winner. These delicious poppers from The Black Peppercorn are a filling way to bring delicious smoked flavor to your madness.

 

What You Need:

  • 10 jalapeno peppers
  • 10 bacon slices, cut in half
  • 10 mini sausages or smokies (or 20 if they are very small)
  • 1 cup cream cheese
  • 1 cup grated Monterey Jack cheese
  • 1 tsp chipotle or chili powder
  • 2 shallots, minced

 

What to Do:

  1. Slice the jalapenos lengthwise. Using a spoon, remove the seeds and membrane. If using bell peppers, quarter them after they are seeded.
  2. Mix the cream cheese, Monterey Jack cheese, chipotle powder, and minced shallots. Fill the hollowed-out portion of the peppers with the cheese mixture.
  3. Place the smokie on top of the cream cheese. Wrap the half slice of bacon around the jalapeno. If the bacon is not staying tightly wrapped, it may be necessary to use a toothpick to hold it in place.
  4. Smoke the ABTs in the smoker, set at 225F, for 2-3 hours, or until the bacon is browned
